Dont jiggle just giggle ;)

Well this is part 1 of my 8 week challenge... first off my goal is to lose 20 lbs ;) so far
 ( I cheated and sort of started a diet 1 weeks ago) I've lost 2 lbs YAY!!! 20 down and 18 to go... Im hoping that even when the challenge is done I can keep my healthy lifestyle and not gain again... the yo-yo diets tend to like me for some reason jeje... I also started going to the gym yesterday! Its so hard to start up again after not having gone in a while, but im happy i finally took the plunge...

my dieting life :(


So Ive decided to share a little recipe with you guys of what I've been eating for lunch. Im trying to eat less meat and more veggies :) so this is a vegetarian meal jeje

Its a delicious wild salad with sauteed mushrooms and onions, and as a little dessert you can have a little bowl of fruit! Im so sorry i didnt take any pictures but i shall do my best at explaining jejeje

So first off you will need:

some lettuce
1/4 cup of spinach
1/2 sliced roma tomato ( you can use any kind you have, roma's are my faves though jeje)
sliced carrots
diced cucumbers
and any other delicious extras you prefer like radishes, purple lettuce, olives... ect ;)

Toss up all those ingredients and you get a wonderful * and colorful * wild salad.

For the sauteed mushrooms and onions topping you will need:

1/2 cup of chopped mushrooms, (shitake mushrooms are awesome for this)
1/4 cup sliced white onions
Oil
Spices

In a frying pan you will want to put about a tablespoon of pure olive oil to saute with instead of butter. :) Next add in both the mushrooms and onions, put the heat on medium and let it simmer for about 3 minutes... then add some salt and pepper to taste and continue to saute for 3 minutes on a low temperature... Your going for soft well cooked veggies, Then wallah your finished, just place your veggies on top of your salad and add a light dressing of your choice and enjoy :)

This has become the highlight of my day jejeje :) I dont know why but sauteed onions and mushrooms are sooooo delicious on a salad <3

  1. Sounds delicious, I'll definitely have to try that one! Congrats on the 2 pounds, lifestyle changes usually aren't easy, so know that I'm cheering you on! :)

  2. How awesome for you! And aren't mushrooms and onions great? I love them both! I know a lot of people automatically react to mushrooms with an "EEWW!", but I tend to think they're delicious. ;)

  3. I LOVVVVE mushroom and onions! I used to throw them on a steak, but I dont do that anymore. Now I thrown them in a pan to sautee with other vege's, (kind of everything but the kitchen sink) when the vege's are done I toss in a few tomato wedges, sliced about 1/4" on the bottom, not thin, not to thick, stir, then when put on the dinner plate, shred some fresh Reggalio(SP) Parmesan Cheese, and enjoy.
    I dont know why I am talking food, heck I just ate. It wouldt be fair to tell you what I a having for desert, being that your on a diet. I need to go on one too! Not working, sitting on my rear at home, not to cool when I try to button my jeans!
    The only advice I have for you is DONT WEAR SWEATS! They end up stretching, and then well, so do you :)
